My take on a Lobster Roll

For my 4th of July weekend I went to Palm Springs where I had a gorgeous vacation rental with a kitchen to die for.  This is one of the first dishes I made this weekend. I made Brioche rolls from scratch and instead of using a mayonnaise I made a hollandaise. We loved  it and it tasted as good as it looks.
